The Food
The menu at Pho 37 revolves around pho — pronounced “fer” — an aromatic broth loaded with rice noodles, tender protein, and fresh herbs. Eight varieties cover well-done beef, medium-rare beef, chicken, prawns, and a special combining all three, alongside vegan chicken and tofu options. The broth is the centrepiece, but the menu stretches well beyond it.
Summer rolls wrapped in delicate rice paper come packed with vermicelli noodles, pickles, cucumber, and herbs, served with hoisin sauce across six filling choices. Bánh mì — Vietnamese baguettes stuffed with mayonnaise, chillies, pâté, pickles, and coriander — offer fillings from braised belly pork to roasties, while fluffy bao buns arrive with lettuce, cucumber, coriander, and a choice of hoisin or chilli topping.
Stir-fried noodle dishes come in two formats: thin rice pho noodles or thick wheat udon, both tossed with bean sprouts, pak choi, and a homemade sauce. The curry noodle bowls add coconut milk and red curry with broccoli and carrots for something richer. Rice dishes include lemongrass-marinated meat rice boxes, crispy belly pork and char siu on the roastie rice, and braised belly pork slow-cooked in soy and spices.
For something with more heat, the spicy Huế noodles deliver a fiery vermicelli broth — the special version features pork knuckle, beef, and steamed pork roll. The Vietnamese crepe, bánh xèo, offers a crispy pancake shell filled with a choice of prawns, pork, or vegan chicken.

The egg coffee layers a rich, custard-like egg cream over strong Vietnamese coffee — a Hanoi classic that draws particular praise from visitors. The Place
Dark green button-tufted leather booths line the perimeter walls, their high backs creating defined dining zones with an intimate, luxurious feel. Multiple red Chinese lanterns hang from the ceiling, casting warm pools of amber light across the room, while an illuminated “Saigon” neon sign glows from the back wall — a focal point that anchors the Vietnamese identity of the space.
The main floor mixes wooden dining chairs and tables beneath the moody ambient lighting, with light wood-effect laminate flooring running throughout. At the service counter, an open kitchen displays rows of fresh herbs, chillies, and garnishes in stainless steel trays — a colourful signal of what goes into each dish. Large illuminated menu boards sit above the grey ribbed counter front.
Ordering follows a counter-service model for the main dining room. The VIP rooms, unique to this Merrion Centre site, offer private hotpot and karaoke packages by booking — a different experience entirely from the walk-in street food format of the main space.
The exterior presents a dark charcoal fascia with floor-to-ceiling glass frontage facing Woodhouse Lane, making the atmospheric interior fully visible from the street.
